Saving a workout you saw shelves it for later. Starting it clones it into a routine of your own, with the weights reseeded from your history rather than left at whatever the author was lifting.

Saving and starting are two steps on purpose. The shelf is a reading list; cloning is when it becomes yours and becomes editable.

Your numbers, their structure

What you take from someone else’s session is the exercise selection and the shape. Their loads are not useful to you, so they are replaced with yours.
